"The Highlands" as a cultural concept only emerges in the late 14th century. It should not be confused with the Gaidhealtachd, which can be applied to the Gaelic speaking areas of any period. Keep in mind that in some centuries, the Gaidhealtachd covered most of the area of modern Scotland, while in others, it was limited to a very small corner.
These works address various aspects of the history and culture of the Gaelic speaking people of medieval Scotland. Their bibliographies and footnotes should give you a start on finding sources for further research and more specialized works.

This is an encyclopedia of topics relating to Gaelic Scotland past and present edited by a highly respected Gaelic scholar and retired Professor of Celtic at the University of Glasgow. Many of the articles were written by the leading experts in the relevant fields. This is an excellent starting place for researching many topics related to Gaelic Scotland as most entries specify sources and references for further study.
